Back to the zoo

Yesterday we ventured out to the zoo for the first time in a long time. Our city has a fantastic zoo, but it was so incredibly hot this summer that we stayed away. For the past couple of weeks, the weather has been slightly milder, so yesterday was our first day back.

My mom went with us and even got us a zoo membership so we could enjoy the zoo all year! When the weather is nice, we try to go about once a week. This was Darcy’s first trip to the zoo and I think she enjoyed herself! She actually looked at some of the animals (I think the polar bear was her favorite).

Delaney loved it as usual. We had a minor incident when she fell down and scraped her ankle, but it was nothing a little ice cream couldn’t fix. Delaney LOVES the penguins and the flamingos. They are by far her favorite animals to see.

The girls were pretty exhausted after the zoo. We took Chick-Fil-A back to our house and rested for a little bit. Darcy slept for most of the afternoon, but Delaney can’t sit still long enough during the day to nap. I cleaned our van for the first time in…a while. It looks so nice! I don’t really want to drive it because I’m scared I’ll mess it up.

Our dinner last night was a hit, so I thought I would share the recipe. It reminded me of a burrito bowl from Chipotle, and it only took 15 minutes from start to finish. Here ya go!

Burrito Bowl

  • 1 bag of rice
  • 1 can black beans, rinsed
  • 1.5 lb. ground turkey or beef
  • 1 can corn, drained
  • 1 16 oz jar of salsa
  • Cumin, garlic salt
Cook rice according to the directions on the package. Brown meat and drain. Add beans, corn, salsa, and spices. Heat through and serve over rice. Top with cheddar cheese.
